Another way I like to connect to a country is through food! There are so many amazing recipes, I can't even begin to start! And food...who doesn't love trying new food! Mexican food is so incredible and I love the process.
I included a variety of my favorite online recipes as well as a special recipe from my friend and cook, Karin. There is no better person to help me build a connection to a country through food than Karin. She advocates for locally sourced and sustainable food sources and provides resources on how to support small businesses. She has a beautiful way of merging fresh, local or International ingredients to create unique dishes. Beyond her expertise in cooking, she makes beautiful connections to so many people in the community!
Oaxacan Inspired Recipe
KARIN'S OAXACA INSPIRED RECIPES
Two recipes both inspired by Diana Kennedy who lived and traveled throughout Mexico learning in the kitchens of various regions. Her experiences were not about wanting to change or tweak the recipes but to translate it properly so that the exquisite food of the various areas would not be forgotten.
Oaxacan Fruit Salad
Naval oranges, Cara Cara oranges, grapefruit, cilantro and jalapeños and salt.
Oaxaca Inspired Carnitas
Simple with a squirt of orange, salt and a little water. Brown the meat first in olive oil and add salt. Then cook it for eight hours.
